For supper last night, I was feeling a little uninspired. We have been eating the same stuff for quite a while and it was chilly and Fall like. Add to that the soup recipes that I was reading over, I really didn’t know what to make (Hubby, A and J all don’t eat soup).
I had a bunch of random ingredients and realized that I could pull together a pretty quick pot pie.
Here is what I had:
- two chicken breasts
- cheddar cheese
- cream of potato soup
- a box of stuffing
- a bag of frozen veggies
Here is what I did:
- cubed and cooked the chicken
- microwaved the frozen veggies for 5 min. to take out the chill.
- grated the cheese.
- mixed the chicke, veggies, cheese and can of soup together in a caserole dish.
- sprinkled the stuffing (prepared as per package directions) over top.
- Baked at 350F for 30 min.
And boy did it taste good. I even had enough for leftovers at lunch today.

Mmm, sounds yummy! I was feeling the same as you today so I made hamburger barley soup. It was delish! Let me know if you are interested in the recipe.
yumm, I will do that soon too. This cold weather certainly has our menu changing.
I love Chicken pot pie. That sounds yummy, although my boy would not eat it.

But I am certianly going to make it.
