
Cake Raffle time at J’s school. This is a photo of last years cake. He wanted bugs and a garden. Something fun and different.
I had never worked with fondant before, but it was very fun all except one part. I was sooooo sick. I had a major sinus infection and couldn’t take anything because of Apple, so I wore a mask and washed my hands until they were raw. And he had a cake for the raffle. He was devastated when he didn’t win, but realized this year that not everybody gets a cake.
Today, I went out and picked up all I needed for this years cake. The theme… are you ready? This is a shocker…. The Beach!
Last summer when we were at my Aunt’s in Delaware, J saw a magazine with a beach cake on it and asked me to make it for this years raffle. And he didn’t forget! My Aunt selflessly gave me the magazine and I have been pouring over the details for a few days now. I have to make a few modifications for ‘nut free’ purposes (in the decorations) but that’s ok, it’s all about creativity. And here is where I get to play. I don’t know who is more excited, me or J!!

Nothing breaks my Winter spirit more than a touch of Spring to remind us how beautiful it is to be outside without freezing our tushies off. I can make it through the -30C’s just fine until it starts to warm up. Once I feel the warm sunshine on my face and get out in just a fleece, there is no turning back.

Or is there? After a glowingly warm weekend where we spent tonnes of time outside we woke up to cold winds, blowing snow and freezing rain.
I think I want to stay inside until Winter is officially over.

A girlfriend of mine sent this to me the other day. And well, I just had to try it. It is a recipe for a chocolate cake in five minutes that she found on a blog called Dizzy Dee.
A chocolate cake in five minutes? Hubby would be so happy that we could whip him up some cake in no time flat.
Despite the fact that J does not eat cake and would not even try it (even if it tasted almost exactly the same as the brownie Bear Paws he ate for snack that day) he did want to help bake it. Apple and J put on aprons and we set to work.

Here is the recipe:
4 tbsp cake flour
4 tbsp sugar
2 tbsp cocoa
1 egg
3 tbsp milk
3 tbsp oil
1 Mug
Instructions:
Mix together flour, sugar and cocoa in the mug.
Add egg, oil and milk.
Stir until smooth.
Put in microwave for 3 minutes on maximum power (1000 watt).
Wait until it stops rising and sets in the mug. (I couldn’t see inside my micro to see if it stopped rising, I think I should have left it a few minutes longer).
Tip contents out onto a saucer and enjoy.
It was very good. Apple and I ate one and Hubby ate the other. It is best while it’s warm, but there were no complaints here.
