Opa is Here!!!

Hubby has been away since last Thursday.  And you are surprised I haven’t blogged about it yet?  Well, being that I was alone with the kids and only have Mickey to guard the house (his bark isn’t quite a bark, not like Cosmo’s old bark) it just didn’t seem like I should be putting it out there on the internet, you know?

So, yes, Hubby has been away at a conference and we have kept ourselves pretty busy so that we wouldn’t notice how much we missed him.  The kids have been great.  Friday through until Tuesday, they slept in every morning and I got some pretty great sleep.  It all went downhill on Tuesday morning when they woke up at 5:30am for the day. And since it was the day for Opa to arrive, it was ok with me, I got a lot accomplished on Tuesday.  I baked up a couple of batches of mini-loaves, one pumpkin the other lemon.

Of course, I didn’t know that Opa doesn’t eat pumpkin.   All the more for me!  With Opa’s arrival last night, I felt a sense of relief that my back-up had arrived.  The kids finally went to bed.  Only to have Apple wake up every 45 minutes until 3am.  It would appear that she caught her brothers cold and could not sleep properly.  She slept from 3am until 7:30am which was great, but I am spent, done, ready for bed.  I hope that tonight is better I could use a good nights sleep.

For our special dinner tonight we had Party Chicken.  This is another of my Aunt’s recipes, she is a wonder that woman.  easy, easy, easy is all I can say.  My Aunt cuts the chicken breasts into small pieces, but I  leave them whole.  Line a pan or dish (depending on how much chicken you use) with dried beef, we don’t get this in Canada, so I use any dried salami or beef from the deli counter, wrap the chicken with a strip or two of bacon, lay on the dried beef, mix a can of cream of mushroom soup with 1 cup of sour cream, pour over chicken, bake for one hour at 350.

And tada!! Serve with potatoes or rice and choice of vegetable (more photos on flickr).

I felt terrible that Hubby wasn’t here to see the kids with Opa, sitting playing Lego, then after supper Opa, A and J played Monopoly Jr.  It was a great evening and makes me wish we had so many more of these nights together.

 

Back to normal with Hubby home tomorrow, can’t wait.

A ‘Secret’ Recipe

Thank each and every one of you for you kind words and sharing your stories.  We are still a little sad around here, but the show must go on as the saying goes.

And what better way than to whip up a wonderful batch of Curry Chicken, Secret Agent Style?

Thankfully, Apple went down for a nap yesterday afternoon, otherwise, this probably would not have happened.  I had already had the chicken in the crock pot from her morning nap, but all the chopping and cleaning that I had to do for the rest (which by most standards is not a lot, but by 8 month baby standards it’s a lot) would have been difficult with Apple strapped to my chest.

 The smell of Chicken Curry filled the house, and then the smell of bacon.  It was all I could do to not eat before the Guys got home.  My Mom is away so, I had invited Dad along for the taste test.  After a long hard day of work, you do not want to disappoint a hungry man.  He loved it.  He and Hubby, could not believe the flavours that all the toppings brought to the sauce.  I went easy on the curry as I didn’t think they would like it too hot, but apparently I could have added more.  And that was the only comment other than Yummy!

I love having new recipes and apparently I have the go ahead to make it again!!  Hooray or me!  Thank you SAJ for sharing your wonderful recipe.

We knew that Saturday was going to be a write off for going anywhere fun.  Although the temperatures were great, just hovering around freezing, the forecasted and received snow was bang on.  March came in like a Lion in my eyes and this is the year we all keep saying, “enough with the snow already”.   Our wonderful neighbour once again blew out our driveway, which was a Godsend as Hubby threw out his back last week and I didn’t want to throw mine out by shoveling another 15cm of snow.

We got some stuff done around the house.  I got my drying racks installed in my laundry room, and it only took three years, whoot, whoot.  I had taken a few photos, but they showed more of my food and stacked laundry on the drier than the racks, so I opted out on those ones.

We managed a trip to the grocery store so I could pick up ingredients for a test cake.  I am making a cake to be raffled off at J’s school this Friday and I had never made Marshmallow Fluff Icing, so I wanted to try it out first and see how it would hold up for me.

 I think it turned out great!  Does it look like the colour of grass?  J wanted a garden cake with bugs, and I wanted to do a cake that wasn’t so girlie.  My intention will be to decorate it with ladybugs, butterflies, flowers, worms, etc.  made out of chocolate molding.  I did a rough drawing, you can see how rough it is…

 I just hope it turns out in the end.  This is my first cake raffle.

We also got some shelves built for the almost finished basement and were getting everybody prepared for our scheduled visit to the Maple Sugar Bush on Sunday morning.  Then…

…. I got sick.

Yes, sick as in running to the bathroom sick.  At first I was thinking I had had too much cake for dessert, but then I realized I had what J had.  Either all my cleaning was in vain or I encountered someone at the grocery store with the same virus.  I don’t actually think I mentioned this, but on Friday I found out that one of J’s classmates was sick at school on Wednesday and J was helping him out and he stepped in it!  Yes, it would have been nice if he had told me.  So, yes I had the same bug.  I took some Gravol but, it makes me very groggy.  Our Sunday plans were shot and Apple was being a handful, so I called in reinforcements.

Mom arrived all smiles, sat and played with Apple, cuddled he while she napped. I napped too.  And Hubby took care of J.  Frolicking in the sunshine and mountains of snow in our backyard.  I tried hard not to cry as I was very sad that we did not make it to the Sugar Bush.  There is always next weekend I guess. And now I am on to the cold that J has.  I think we will be making another return to the Doctor’s this week.  This is the most we have seen him in four years!

Ahhh Winter, is it over yet??
