Food

I was looking to serve something just a little different than usual.  And just having stocked up the freezer with meat at Costco, I had a couple of delicious steaks waiting to play with.  Pioneer Woman posted her Steak Bites recipe a week or so ago and I thought I would give it a shot.

It was Saturday night, so we usually don’t do a big supper, I was thinking we would have some Steak Bites and a glass of wine and that would be it, but Hubby wanted potatoes and carrots too, so it was a full fledged affair.  And truthfully, it took longer to cook the potatoes than it did to make the Steak Bites.

I preped the meat and seasoned the meat (I used Montréal Steak Spice).

Melted and browned the butter.

Added the meat.

Flipped the meat.

And put it on the plate.

It was delicious.  And Hubby loved it because each piece was cooked to perfection.  We will be adding this one to our repetoire for sure.

Thank You PW!!

My Sick Little Boy

It is bad enough to get sick.  But, to get sick and not only miss the last few days of school.  He missed his class Christmas party for which I made Rudolf cupcakes that he requested.  It has been a hard few days.

He has been a real trooper though.  Yesterday wasn’t too bad.  But, today his fever came back, stronger and his voice was almost completely gone.  He laid about watching movies and tv.  For a while I thought he was getting better becasue he asked if he could play Wii.  Thankfully I said no, that would have wiped him out completely.

Hubby is thinking J has the flu, I am still thinking it is just a really bad cold.  Up until last year he always got a fever with a cold, will see what tomorrow brings.  If he seems worse instead of better, then we may head to the Doctor.

I bought three bags (ok, I bought one and Hubby picked up two more) to try to get 48 brown Smarties.  I still ran out and had to make Rudolf have blue eyes. And one with one blue eye and one brown one,  just like Mickey (our dog).  Hubby doesn’t mind a few extra Smarites though.

I did keep one for J.  He didn’t seem to want to eat it though, poor guy.

Apples, apples everywhere.

I spent Monday getting the fixings ready for Apple butter.  I made the apple sauce, then got the slow cooker ready.  It needs to cook for 12 – 14 hours so I put it on at 7pm and let it go all night long.  Which is great, except when I had to wake up and feed Apple.  Oh the smell of apples and cinnamon.  It was enough to make me want to go down and get a snack, but I didn’t.

Hubby and Opa put it on their ice cream.  Apple and I put it in our yogurt.  J and A don’t eat apple butter apparently, but that’s ok, more for us!

Here is the finished batch.  Some smaller jars and a few larger ones. But, all in all delicious.  Hubby was trying to tell some ladies at work about it and they couldn’t grasp that I made it without butter.  I guess a lot of people actually use butter in their apple butter, but I have always used the non-butter recipe.  It calls for apple sauce, apple cider, honey, cinnamon, all spice and cloves.  That’s it!

And as if we aren’t eating apples every two minutes, I seriously had to stop J he was eating them like there was no tomorrow, Hubby wanted an Apple Crisp.  My Mom has always called it an Apple Betty, not sure why, but whether you call it a Crisp or a Betty it sure was delicious.  Again, J and A didn’t eat any but Hubby, Opa, Apple and I dove right in.  I might see an Apple pie in the future….

**Thank you all for your kind words and support for the run.  I am very excited and thrilled at the support I have received.  I ran 3k full out tonight, so I hope to run earlier tomorrow when I haven’t just finished a huge meal that ended in Apple Betty, to see if I can make it to 4k.
