We love our eggs.
And since I seem to always have some boiled ones on hand to throw in a salad or just for a snack, the kids have taken to asking for one here an there as well. I am never going to say no to an egg for a snack!
Since I stopped eating cereal every day for breakfast and now only eat eggs, I feel so much better. I don’t feel the need to snack before lunch, where I was always hungry in a couple of hours with cereal. I don’t get that sugar crash or carb crash or whatever it is called, instead I just feel great.
Gone is the old myth that you could only eat eggs once or twice a week, there is no reason to not eat them once a day. Eggs are chalk full of vitamins and minerals and are quite low calorie (70cal per egg, I believe). So what are you waiting for? Sunday breakfast? Don’t you will be pleasantly surprised.

We are an egg-eatin’ family too – we keep a stash of hard boiled, peeled eggs in the fridge. Great for a snack. One of my best memories is when we went on vacation to my grandparents. My grandma had these little egg cups and she would make us soft-boiled eggs, cut off the top and we would dip our toast in. It was awesome.
Sharon!! My Grandma used to make use soft boiled eggs in the same kind of egg cups, I wish I had some so I could do it too. Will have to be on the look out for them 🙂
I love eggs, but never think to eat them in the morning. What else do you usually have with eggs in the morning? Perhaps I need to switch it up!
those photos are beautiful! You should see the free range, organic eggs I got from our co-op last week. The yolk is orange. Beautiful orange. They taste divine!
Krista, to be honest, right now I am eating my eggs with refried beans and salsa! It is all part of my efforts to eat better and trim down. The beans are a ‘slow’ carb so they last longer in your system than bread and the salsa is my fun way of getting my veggies in the morning :). Sometimes I make an omelette with spinach too.
Thank you Chantal, I can only imaging your free range eggs! I am sure I would be photographing those as well. I need to get a hold of some of the lovely coloured eggs (blue, green, brown) that Martha Stewart has.
We got our egg cups during the sidewalk sale at Westfest. I can’t promise, but I would imagine Kitchenalia in Westboro would have them. My son likes eggs scrambled, soft-boiled, fried, in French Toast, etc. – he switches it up and I’m always glad for him to eat this alternate source of protein.
Thanks Tudor! I may have to pop in!! My Grandma had these awesome ones, one side was bigger than the other so you could chop it up with melted butter if you like.
