The Non-Cake

I am not sure how J formed his dislike for cake or all things cake-like (muffins, cupcakes, soft bread).  I am sure it is just a texture thing, but either way he doesn’t eat cake.  When I was preparing for his birthday and he wanted a cake for his friends, I said to him, “But, J you don’t eat cake!”.  He said, “It doesn’t matter Mommy, I will just lick the icing.”

Well, I would have non of that.  For his first Birthday party with friends from school, he was going to have a cake that he wanted to eat.  So I asked him if he would like a Rice Krispies Cake and he loved the idea.  Which also worked great because his best buddy is allergic to peanuts, so I was going to have to special order the cake for him.

I made two recipes of Rice Kripies Squares (recipe from the box). and pressed them into circular cake pans.  I buttered them and added a strip of parchment paper so I could lift them out easier.  I flipped them over, added some pre-made icing, Smarties (the Canadian kind)  and some Birthday Candles.  It was great and all the kids loved their cake.

It will certainly make more appearances here in our house as the Non-Cake Birthday Cake.

    That is beautiful! My mom made a popcorn cake once when we were growing up. I think she still has the recipe somewhere.
